Zero carb?

Carbohydrates are what mess up the blood sugar of those of us who have diabetes. Most people get most of their carbohydrates from bread, potatoes and pasta. But all fruits and nuts and most vegetables also contain carbs. So, trying to keep your carb levels low enough requires constant vigilance. I’m not so good at that.

Then, yesterday I read a blog written by a woman who eats NO carbs. At all. It appears there are many people who do this. If I ate no carbs I would have no blood sugar fluctuations. That would be a good thing.

So, what does one eat if carbs are not part of your diet? Animal products.

Yes, meat. Along with eggs and dairy products. And plenty of fat.

As much of those as you want. No measuring. Just eat when you are hungry and stop when you get full.

Eating enough fat helps you get full before you get tired of chewing. And keeps you regular without fiber according to the blogger.

Does eating only animal products sound boring to you? Here’s a partial list I made of what to eat.

Beef: hamburgers, roast, deli-sliced beef, steak, broth, tallow.

Pork: bacon, roast, chops, bacon grease, lard, ham depending on how it was cured

Fish: canned tuna, canned salmon, shrimp, fresh fish

Poultry: rotisserie chicken, roast turkey, deli-sliced turkey, broth, eggs

Dairy: butter, sour cream, cheese, cottage cheese, cream cheese

The blogger also seasons with herbs & spices, mayonnaise, and mustard.

I think even I can get enough variety in my meals using those ingredients.

So, I’m going to try it. Wish me luck.

ps. Lunch was sliced turkey, three strips of bacon, a slice of cheddar cheese, and a dab of mayo all chopped up and stirred together. I’m full.

pps. I forgot to tell you that a medical doctor/scientist I trust did a study and determined you get all the minerals and vitamins your body requires just eating meats. The ones you can only get from plants are not essential.

    as a matter of fact I actually thought you’d already tried this and did okay on it!
    it sounds very much like the Atkins diet. you will lose quite a bit of weight I think.
    didn’t you used to do paleo eating? it sounds like that to me or very similar.

    if I dare mention this… every cardiologist within shouting range throws a fit. a FIT!
    the only meats I have eaten for a long time are chicken and fish and shrimp.
    not for health reasons but because of the animals. and yet i’m not a huge fan of vegetables!

  2. Carbs are my enemy…not because of my blood sugar. It goes straight to my hips. It is so hard to not eat carbs. I have tried. But I may try again. You have given me food for thought…lol

  3. Terry’s downfall is carbs. Everything carb. I try to push more meat at him but he’s not a real meat eater. Guess who eats it for him? I’d love our diet but I’d have to add some greens. I’d have to add some fruit too. I’m thinking I wouldn’t be good at it. Lots of luck to you. Keep us posted how it works.

  4. I don’t think zero carb is possible. ‘The Art and Science of Low Carb Living’ by Vollnek and Phinney is very good. There is an adaptation period called the ‘Ketogenic Flu’. I had pancreatic symptoms from the high fat and did not adapt but tweaking the diet with a tad more protein and carbs worked well. I am four months in. Eating healthy fats is crucial – lack of same is probably a big part of the problem.

    The science behind this mod of the Atkins Paleo diet is good. Clinical care supporting it is not. I fired the PCP who suggested it for his response to my problems.

    Energy levels do go down to start. Winter when we are less active is prob better than spring/summer. Getting a digital food scale and a web app nutrient tracker are good. Just gradually substituting veggies for carbs with a taste satisfying amount of fat might be easiest.

  5. I think I will try this, too. I would also need to add some greens. If I could wrap any of these meats in a lettuce leaf instead of bread. I have gained some weight lately and have been diagnosed with COPD.
    Breads are my downfall along with potatoes. So off to the store tomorrow am to get some lettuce!! Moving to the downstairs apartment next weekend. No more stairs for me.
