Weight Watchers Cooking

I remember many years ago our daughter calling to ask me how to make deviled eggs. I told her to mash the yolks with a fork then stir in Miracle Whip until the texture looked right and add mustard until the color looked right. She didn’t appreciate those instructions but it’s how I’ve been making deviled eggs all my life.

Until now. Now I need to know how many Weight Watchers PointsPlus are in those deviled eggs and Weight Watchers doesn’t have a measure that says “looks right.” So, I measured. Sort of. I was using large eggs instead of the mediums we used to buy but I mashed the egg yolks with a fork as usual. Nowadays, I use Miracle Whip Light so I actually measured out a couple of tablespoon’s worth and stirred it in to the yolks. Didn’t look right. So I added another tablespoon’s worth; then one more. OK, four tablespoons of Miracle Whip Light for my four eggs. That’s a proportion I could remember. Then I added mustard until the color looked right. No, I didn’t measure it. Mustard has no points so I felt no need to measure it but I would guess it was between an 1/8 and 1/4 teaspoon. After filling the eggs I sprinkled then with paprika as I always have. No, I didn’t measure it either–no points, you see.

So, there you have it.

I had half the recipe of deviled eggs (5 points) with a chopped banana (zero points) and a half cup of unsweetened strawberries (zero points) stirred in with the banana for a total of five Weight Watchers PointPlus. A very satisfying breakfast which I will be able to repeat with the other half of the eggs. Yummy!

And now I know how much Miracle Whip I add to my deviled eggs. Probably should have measured the mustard, though, in case I need to teach someone else how to make deviled eggs. You never know when such an opportunity might arise.

ps. I gained weight this week after two weeks of losing a lot. So now I know for sure: a big bowl of micro popped popcorn drowned in butter is not a good supper for me. Guess I’ll need to find something else to snack on as we watch movies most evenings.

  1. Popcorn smothered in butter is definitely not a good snack if you’re losing weight. On the other hand it sure is just plain good. Cooking to lose weight is very different than eating low carbs to prevent sugar spikes in a diabetic. I guess we can all learn a few new tricks and that we’re doing too.

  2. Not being much of an egg person and being married to one means that Jim gets to make his own deviled eggs. He knows I’d probably ruin them. We also found out that Jim can’t have that big bowl of popcorn either because it makes his blood sugar go up up and away.

  3. I love the Weight Watchers Ice cream bars. Only 3 points. For popcorn, I buy Orville Redenbachers Smart Pop single serve. They are smaller packets and only 3 points!!

  5. This falls into the category of “being lazy”, but what I’d do is also get a measure by weight. I hate having to spoon things out, and I hate having to wash my measuring spoons after making something ridiculously simple – so I use my digital kitchen scale and set it to grams.

    That way I get a precise measurement with a lot less hassle.

    In go the egg yolks. Add dollops of Miracle Whip until you hit the weight measure, same with the mustard, and poof – it’s done. You need the bowl to mix in anyway, and in my kitchen the scale is always front & center on the counter, so it’s much easier.

    Maybe I’m overanalyzing….but I find that weighing instead of scooping/spooning frequently saves me a lot of time and a lot of unnecessary cleanup.

  6. I learned a nifty trick for making deviled eggs that may shave a few points off your breakfast! When you use only mayo for your moisture it takes quite a bit to get the right consistency. I always made them the same way as you, but here’s how I make them now:
    6 eggs
    3/4 tsp mustard
    1.5 tsp cider vinegar
    1/4 tsp Worcestershire
    3 Tbsp light mayo
    Also, I don’t do Weight Watchers so I don’t know about points for this one, but my friend makes her deviled eggs (and egg salad) with half mayo/half hummus, it tastes different, but good! (She also makes her egg salad with mostly egg whites and just one or two yolks, again I don’t know about points but 1 egg white=15 calories, 1 egg=70 calories.
    Oh! And for popcorn, do you like Kettle Korn? I found that the Kettle Korn popcorn the Cubscouts sell by the case in the fall is amazingly low cal–250 for an entire regular sized bag! It’s sweetened with sucralose instead of sugar, so caloric-ly it’s more like plain popcorn AND you get to help some kids go camping (maybe someday they’ll be RV’ers 😉 For the butter, I finally figured out that I was putting so much butter on because I wanted the salty-butter taste, now I can use a LOT less, and just up the salt. If you want a treat sometime, try salted carmel popcorn, it has less calories than buttered popcorn too. Use plain popped/unbuttered popcorn. Put it in a large microwave bowl and put a couple tablespoons of carmel dip on top. (I use marzetti’s, from the produce section) Microwave for one minute and stir like mad to get the popcorn coated. Grind sea salt all over, more than normal, the sweet/salt combo is *really* good! 🙂
